I didn't have brandy but used a bit of old rum. I've never eaten brandied peaches in my life but it was very easy and so good I couldn't believe I made it. The first of these books is just what it purports to be. Bone's book has gotten a lot of PR from various newspapers like the NYT. It's a small collection of small batch preserving recipes (canning, freezing, smoking, oil and salt) with three or four recipes for using each preserved item, and an overview of various preserving techniques. Lots of pretty pictures of food and a nice format. I like it because it looks at preserving from a slightly different angle than the traditional preserving handbooks, and we are a small household so the small batch, as in you overbuy at the farmer's market, is useful. Some of the recipes are too chi-chi for us but so it goes. She explains basically the reasoning behind different preserving methods, uses up to date food safety, and talks a little bit about how you to can modify preserving recipes. If you too overbuy at the farmer's market, you should take a look at this book. Maybe check it out from the library before buying it because it's not for everyone.
